ABSTRACT

Aims: To determine the prevalence of Candida species in ‘thairu’, a traditional fermented milk prepared in the households of Kerala. Study Design: ‘Thairu’ samples collected randomly from the households in Wayanad, Kozhikode, Malappuram, Palakkad and Kannur districts of Kerala. This was followed by enumeration and identification of yeast using API 20CAUX Kit. Determination of pH and acidity of samples. Place and Duration of Study: Department of Dairy Microbiology, College of Dairy Science and Technology, Pookode, Wayanad, Kerala. September 2021- December 2021. Methodology: A total of 30 household ‘thairu’ samples were collected from households of Wayanad, Kozhikode, Malappuram, Palakkad and Kannur districts of Kerala in sterile bottles. The samples were serially diluted in normal saline and pour plated on to Yeast Extract Glucose Chloramphenicol Agar for isolation and enumeration. The pH was measured using pH meter by directly inserting the probe into the homogenized sample. Titratable acidity in per cent lactic acid was measured using N/10 NaOH. The isolates were identified based on the sugar fermentation pattern using API 20C AUX kit (Biomerieux, France). Results: The yeast count in the samples ranged from 5.0 to 6.7 log CFU/g with an average of 5.89±0.38 log CFU/g. Average acidity and pH of the samples were 1.92±0.34 % LA and 3.59±0.60 respectively. A total of 23 yeast isolates were identified based on morphology and carbohydrate fermentation pattern using API 20C AUX kit (Biomerieux, France). Exactly 86.95 per cent of isolates belong to Candida species. Conclusion: Observations of the study revealed the high prevalence of Candida species in traditional fermented milk ‘thairu’. Predominant Candida species were lactose fermenters, but the presence of a few species with spoilage and pathogenicity potential were also detected. The safety assessment of Candida species is essential before applying them as starter cultures for food fermentations.

RESUMEN Introducción: Helicobacter pylori se relaciona con enfermedades benignas y malignas gastrointestinales. No se dispone de un esquema ideal para su erradicación, pero el uso de probióticos y prebióticos puede servir como terapia adyuvante. Objetivo: Describir las manifestaciones clínicas, endoscópicas, histopatológicas y la erradicación de la infección por Helicobacter pylori en los pacientes tratados con triple terapia y leche fermentada simbiótica. Métodos: Se realizó un estudio descriptivo, entre enero de 2017 y mayo de 2019, en 30 pacientes con Helicobacter pylori (diagnosticado mediante estudio histopatológico y prueba de ureasa). Las variables incluidas fueron: edad, sexo, manifestaciones clínicas, diagnóstico endoscópico e histopatológico y erradicación de la bacteria. Para el análisis de los resultados se emplearon estadísticas descriptivas (porcentaje y medidas de tendencia central). Resultados: Hubo 71 % de pacientes femeninos. La edad media fue de 48,6 ± 16,3 años (mínima 18 y máxima de 74 años). La dispepsia estuvo presente en 46,6 % pacientes. La gastritis eritematosa antral, antral eritematoerosiva y eritemato nodular se presentaron en 23,3 % cada una. La gastritis crónica atrófica moderada estuvo presente en el 40 % de los individuos. En 96,7 % enfermos se erradicó la bacteria. Conclusiones: La dispepsia y la gastritis crónica atrófica moderada representan el síntoma y el diagnóstico histopatológico más frecuente, respectivamente. La gastritis eritematosa antral, antral eritematoerosiva y eritematonodular constituyen los diagnósticos endoscópicos más comunes. La tasa de erradicación de H. pylori es elevada.


ABSTRACT Introduction: Helicobacter pylori infection has a wide worldwide distribution and is related to benign and malignant gastrointestinal diseases. Although there is no ideal scheme to eradicate the bacteria, the use of probiotics and prebiotics can serve as adjunctive therapy. Objective: To describe the clinical, endoscopic, histopathological manifestations and the eradication of Helicobacter pylori infection in patients treated with triple therapy and symbiotic fermented milk. Method: A descriptive, cross-sectional study was carried out from January 2017 to May 2019. 30 patients with Helicobacter pylori infection (diagnosed by histopathological study and urease test) were included. The variables included were: age, sex, clinical manifestations, endoscopic and histopathological diagnosis, and eradication of the bacteria. Descriptive statistics (percentage and measures of central tendency) were used to analyze the results. Results: There were 71 % female patients. The mean age was 48,6 ± 16,3 years; minimum age of 18 and maximum of 74 years. Dyspepsia was present in 46,6 % of patients and epigastric pain in 33,3 %. Erythematous antral, antral erythematous erythematonodular and erythematonodular gastritis occurred in 23,3% each. Moderate atrophic chronic gastritis was found in 40 % of individuals. Helicobacter pylori was eradicated in 96,7 % of patients. Conclusions: Female sex and the fourth decade of life predominated. Dyspepsia and moderate atrophic chronic gastritis are the most frequent symptom and histopathological diagnosis, respectively. Erythematous antral, antral erythematous, and erythematonodular gastritis represent the most common endoscopic diagnoses. The eradication rate of Helicobacter pylori was high.

ABSTRACT

Abstract In neonates, rapid change in diet imbalances gut health allowing colonization of opportunistic pathogens that confer harmful effects on animal health causing reduced digestion and malabsorption of nutrients. In this milieu, probiotic feeding can be a promising approach in promoting animal health and stabilization of gastrointestinal microbiota. Hence, the present study was designed to investigate the effect of Lactobacillus acidophilus NCDC15 enriched fermented milk on nutrient digestibility, faecal biomarkers and immune response in Murrah buffalo calves. Twenty-four, neonatal calves (5-7 days) were randomly allocated into four groups for 90 days. The control group (CT) was provided a basal diet of calf starter and green fodder (maize and jowar), without any probiotic fermented milk (PFM) supplementation. Basal diet was supplemented with probiotic fermented milk at 100, 200 and 300 mL/calf/day, in PFM100, PFM200 and PFM300 groups, respectively. Nutrient digestibility remained similar among the groups. Faecal acetate was higher (P<0.05) in PFM200 and PFM300, while, faecal butyrate was increased (P<0.05) with all levels of probiotic supplementation than control. Faecal Lactobacillus and Bifidobacterium count were increased (P<0.05) with a concomitant reduction in coliform population (P<0.05) among all the treatments. Cell-mediated and humoral immune response were higher (P<0.001) in PFM200 and PFM300 than CT. Overall, it can be concluded that inclusion of Lactobacillus acidophilus NCDC15 in the form of fermented milk upto 300 mL/calf/day improved immunity and faecal biomarkers in Murrah buffalo calves without any adverse effect on nutrient utilization which may positively impact growth performance in Murrah buffalo calves.

ABSTRACT

Abstract The health benefits attributed to probiotics generate interest in the search of competent strains adapted to several ecological niches, especially those related to traditional beverages and foods of each country. Pineapple tepache, a traditional Mexican fermented beverage, was used for the isolation of lactic acid bacteria with probiotic potential, one of which withstood the in vitro tests. The isolated strain AB-05, which exhibited the tested probiotic functional properties, was designated as Lactobacillus pentosus ABHEAU-05. The sequence was registered in GenBank under access code MK587617. This study is the first report of a lactic acid bacterium with in vitro digestion resistance isolated from pineapple tepache. The survival of L. pentosus ABHEAU-05 in a symbiotic medium was proven using fermented milk enriched with inulin. The in vitro digestion-resistant probiotic activity of lactobacilli was measured through analysis of pH and proteolysis. Results showed that L. pentosus grew properly in fermented milk; therefore, this microorganism could be used in the manufacture of this kind of products. The concentration of L. pentosus reached up to 8.5 logCFU/ml after 40 h of fermentation. In addition, the production of peptides and the decrease in pH indicated the vigorous and active metabolic state of the lactic acid bacterium tested. The activity and the concentration of this microorganism were maintained during refrigeration. The results of this research conclude that L. plantarum ABHEAU-05 is an in vitro digestion-resistant microorganism that can be used as a starter culture for the production of functional foods of dairy origin.


Resumen Los beneficios a la salud atribuidos a los probióticos generan interés en la búsqueda de cepas competentes adaptadas a varios nichos ecológicos, especialmente los relacionados con bebidas y alimentos tradicionales de cada país. En este estudio, se aisló del tepache de pina, una bebida fermentada tradicional mexicana, una bacteria láctica resistente a la digestión in vitro. Entre 5 bacterias aisladas, una de ellas soportó las pruebas simuladas de digestión gastrointestinal. Se analizó la resistencia a sales biliares, a condiciones ácidas y al ataque enz-imático con pepsina. La bacteria aislada, que exhibió las propiedades funcionales probióticas referidas, fue identificada como Lactobacillus pentosus y designada como L. pentosus ABHEAU-05. La secuencia fue depositada en GenBank (acceso MK587617). Se comprobó la supervivencia de L. pentosus ABHEAU-05 en una leche fermentada adicionada con inulina y su resistencia a la digestión in vitro mediante el análisis del pH y la proteólisis. Los resultados muestran que la leche fermentada es una matriz adecuada, donde L. pentosus ABHEAU-05 se desarrolla sin inconvenientes, alcanzando un título de 8,5 logufc/ml después de 40 h de fermentación. Además, la producción de péptidos y el descenso del pH indicaron el estado metabólico vigoroso y activo del microorganismo probiótico. Se concluye que L. pentosus ABHEAU-05 es un microorganismo resistente a la digestión in vitro, que puede servir como cultivo iniciador para la producción de alimentos de origen lácteo. Este es el primer informe acerca del aislamiento de una bacteria ácido láctica resistente a la digestión in vitro a partir del tepache de piña.

In the present study, nonfat yoghurt made with whey protein isolate (WPI) or pasteurized egg white powder (albumin) was added with syrup containing jaboticaba pulp and lyophilized jaboticaba peel flour and six experimental groups were made: control yoghurt (CY); WPI yoghurt (WY); albumin yoghurt (AY), syrup yoghurt and WPI (WSY); syrup and albumin yoghurt (ASY) and syrup yoghurt (SY). This study aimed to verify the influence of the addition of fruit syrup on the phenolics compounds and on the instrumental color parameters of yoghurts made with proteins on the 1st and 28th day of storage. There was a significant decrease in total phenolics content in yoghurt containing WPI and syrup (from 1408.14mg GAE.L-1 to 686.73mg GAE.L-1), as well as total anthocyanin content. However, yoghurt containing syrup and albumin showed an increase in total flavonoid content on day 28 of storage (from 28.30mg QE.100g-1 to 38.29mg QE.100g-1). Regarding color, there was an increase in L* and b* values in yoghurt containing syrup and WPI and in yoghurt containing syrup and albumin. For a* values, a decrease was observed at the end of the storage period in samples containing protein (WPI or albumin) and syrup. The data showed that the addition of jaboticaba syrup to yoghurts containing different proteins provided different phenolics compounds contents at the end of the storage period, and different color parameters to the final product.


No presente estudo, iogurtes desnatados feitos com proteína isolada do soro do leite (PIS) ou albumina isolada da clara do ovo pasteurizada em pó (albumina) foram adicionados de xarope contendo a polpa da jabuticaba e a farinha liofilizada da casca da jabuticaba, obtendo-se seis grupos experimentais: iogurte controle (CY); iogurte PIS (WY); iogurte albumina (AY); iogurte xarope e PIS (WSY); iogurte xarope e albumina (ASY) e iogurte com xarope (SY). Neste estudo objetivou-se verificar a influência da adição do xarope da fruta nos compostos fenólicos e nos parâmetros instrumentais de cor dos iogurtes elaborados com proteínas no 1º e 28º dia de armazenamento. Houve uma diminuição significativa no teor de fenólicos totais no iogurte contendo PIS e xarope (de 1408.14mg GAE.L-1 para 686.73mg GAE.L-1), bem como no teor de antocianinas (de 158.45mg cyanidin-3-glucoside.L-1 para 56.45mg cyanidin-3-glucoside.L-1). No entanto, os iogurtes contendo xarope e albumina apresentaram um aumento no teor de flavonóides totais no 28º dia de armazenamento (de 28.30mg QE.100g-1 para 38.29mg QE.100g-1). Em relação a cor houve um aumento dos valores de L* e no valor de b* no iogurte contendo xarope e PIS e no iogurte contendo xarope e albumina. Já para os valores de a* foi observado uma diminuição ao final do período de armazenamento nas amostras contendo proteína (PIS ou albumina) e xarope. Os dados demonstraram que a adição do xarope de jabuticaba a iogurtes contendo diferentes proteínas proporcionaram diferentes conteúdos de compostos fenólicos ao final do período de estocagem, e diferentes parâmetros de cor ao produto final.

ABSTRACT

El objetivo de este trabajo es identificar el consumo de leche fermentada en personas hipertensas en diferentes poblaciones a nivel internacional con el fin de conocer sus efectos sobre la presión arterial. Para la metodología, se realizó una búsqueda en la base de datos PubMed, en la que solo se incluyeron ensayos clínicos en humanos. Entre los resultados obtenidos se muestra que la fermentación más utilizada en las investigaciones fue a partir de Lactobacillus helveticus con tripeptidos bioactivos añadidos con Isoleucina-Prolina-Prolina y Valina-Prolina-Prolina (IPP y VPP); también se utilizaron leches fermentadas a partir de Lactobacillus casei strain Shirota (LcS), Lactobacillus planetarium A7, Lactococcus lactis YIT 2027, Lactobacillus casei TMC0409 y Streptococus thermophilus (TMC) 1543. Se observaron mejores beneficios en la disminución de presión arterial en aquellas intervenciones donde fueron utilizados los tripeptidos IPP y VPP.


The objective of this paper is to identify the intake of fermented milk in hypertensive people in different population in the world in order to know their effects on blood pressure. Methodologically, we developed an electronic search on PubMed database to identify clinical trials on humans for this review. The selected results show that the most fermented type used in the investigations was from Lactobacillus helveticus with bioactives tripeptides added Isoleucine-Proline-Proline and Valin-Proline-Proline (IPP and VPP); also there were used Lactobacillus casei strain Shirota (LcS), Lactobacillus planetarium A7, Lactobacillus casei strain Shirota, and Lactococcus lactis YIT 2027, Lactobacillus casei TMC0409 y Streptococus thermophilus TMC 1543 for the fermented milk. Better blood pressure- lowering effects were reported in those interventions where IPP and VPP tripeptides were used.

ABSTRACT

A deficiência de folato é um problema de saúde pública que vem sendo combatido através da fortificação obrigatória de ácido fólico. Entretanto, a ingestão excessiva pode causar efeitos colaterais indesejados. A forma natural da vitamina produzida por algumas cepas de bactérias láticas pode ser uma alternativa segura para aumentar a ingestão de folato pela população. Este trabalho visou selecionar as melhores cepas de BAL produtoras de folato, identificar as melhores condições para a produção da vitamina e avaliar a biodisponibilidade do folato produzido pelas cepas no leite fermentado, empregando-se testes em modelos animais. O estudo foi desenvolvido com cinco cepas de Streptococcus thermophilus (34v, 170v, 268v, 361v e 341 pc) e um cepa de Lactobacillus plantarum (16cv), todas boas produtoras de folato. As condições de produção e a combinação de cepas que resultaram na melhor produção folato foram utilizadas para produzir um leite biofermentado (BFM), avaliando-se a biodisponibilidade da vitamina produzida empregando-se um modelo animal de depleção/repleção, com camundongos Balb/c submetidos a 14 dias de depleção, seguido de 21 dias de repleção da vitamina. Após os 35 dias, os animais foram sacrificados, retirando-se sangue, rins, fígado, baço e intestino para quantificação de folato e avaliação histológica da mucosa intestinal. Todas as quantificações de folato foram feitas pelo método microbiológico. A melhor combinação de cepas (St. Thermophilus 34v + Lb. Plantarum 16cv) resultou na produção de 300 ng/mL de folato, sendo a temperatura de 42ºC melhor que 37ºC para a produção da vitamina. A produção de folato no leite na fermentação em pH controlado 6,0 foi 35% superior à observada no leite fermentado em pH livre. As concentrações de folato no baço e glóbulos vermelhos foram mais altas nos camundongos que ingeriram leite fermentado bioenriquecido (BFM) em relação aos demais grupos de animais. A relação vilosidade/cripta nos camundongos dos grupos BFM foi igual à observada nos animais que receberam leite suplementado com ácido fólico. Houve aumento da hemoglobina, hematócrito e hemácias nos camundongos que ingeriram BFM, evidenciando a bioeficácia do folato produzido. Esses resultados indicam que a produção de folato por bactérias láticas selecionadas em produtos fermentados pode ser uma boa alternativa para aumentar a ingestão de vitamina B9 pela população

ABSTRACT

The aim of this study was to determine the optimal temperature ranges of milk fermentation by the microbial association Tibetan Kefir Grains and to set changes during the storage of the fermented milk product. The optimum technological parameters of milk fermentation by Tibetan Kefir Grains compliance are set. Compliance of these parameters ensures the desired metabolic processes and obtaining a dairy product with good organoleptic properties: fermentation temperature is 28±1 °Ð¡ for 24 hours, acidity of the product is from 80 to 120 % lactic acid, the amount of lactic acid bacteria ­ (2.9±0.22) × 108 CFU/cm3, fungi ­ (3.7±0.27) × 104 CFU/cm3. It was found that during the storage of the fermented milk drink produced on the leaven Tibetan Kefir Grains at the temperature of 4 ± 1 °Ð¡ for 10 days titratable acidity of the product increased by 1.2 times to 108.4 ± 8.3 °Ð¢, the population of lactic acid bacteria (Lactobacillus fermentum and some other) and yeast (Saccharomyces spp and some other) remained at the initial level. This indicates that the finished fermented milk product can be stored without losing functional probiotic properties for at least 10 days and meets the requirements of the standard (ISO 4471). At the same time, at a temperature of +8 ± 1°Ð¡ the expiration date of the fermented milk drink is decreases to 7 days(AU)


El objetivo de este estudio fue determinar los rangos de tempera- tura óptimos de la fermentación de la leche mediante la asociación microbiana de granos de Kéfir Tibetanos y estudiar los cambios durante el almacenamiento del producto lácteo fermentado. Se es- tablecieron los parámetros tecnológicos óptimos de fermentación de la leche utilizando los granos de Kéfir Tibetano. El cumplimien- to de estos parámetros garantiza los procesos metabólicos desea- dos y la obtención de un producto lácteo con buenas propiedades organolépticas: la temperatura de fermentación es de 28 ± 1° С durante 24 horas, la acidez del producto es de 80 a 120% de ácido láctico, la cantidad de bacterias del ácido láctico - (2.9 ± 0.22) × 108 UFC /cm3, hongos - (3.7 ± 0.27) × 104 UFC /cm3. Se encontró que durante el almacenamiento de la bebida láctea fermentada pro- ducida con los granos de Kéfir Tibetanos de levadura a una tempe- ratura de 4 ± 1° С durante 10 días, la acidez titulable del producto aumentó 1.2 veces a 108.4 ± 8.3 ° Т, la población de las bacterias del ácido láctico (Lactobacillus fermentum y algunas otras) y la levadura (Saccharomyces spp y otras) se mantuvieron en el nivel inicial. Esto indica que el producto lácteo fermentado terminado se puede almacenar sin perder propiedades probióticas funcionales durante al menos 10 días y cumple con los requisitos de la norma ISO 4417. Al mismo tiempo, a una temperatura de + 8 ± 1 ° С, la fecha de vencimiento de la bebida de leche fermentada se reduce a 7 días(AU)

ABSTRACT

O objetivo deste estudo foi desenvolver e avaliar iogurte e sobremesa láctea fermentada adicionados de doce de caju. O doce foi elaborado com proporção para atingir 40ºBrix. O iogurte e a sobremesa láctea fermentada foram elaborados e avaliados quanto ao pH, acidez, proteína total, gordura, EST e cinzas após um dia de fabricação. A pós-acidificação foi avaliada durante 35 dias de armazenamento refrigerado. O teste de aceitação e intenção de compra foi realizado após 14 dias de armazenamento refrigerado. Os dados das características físico-químicas, pós-acidificação e avaliação sensorial foram analisados por Análise de Variância e teste de Tukey (p<0,05) ou análise de regressão. Os produtos atenderam os parâmetros físico-químicos e microbiológicos exigidos pela legislação. Na pós-acidificação, o pH dos produtos reduziu ao longo do tempo e a acidez do iogurte foi superior da sobremesa láctea fermentada sendo em média 0,12% de ácido lático durante os 35 dias de armazenamento. O iogurte apresentou maior aceitação e intenção de compra que a sobremesa láctea fermentada. A fabricação dos produtos torna-se viável do ponto econômico, físico-químico e sensorial, além de agregar valor ao soro de leite e o caju.


The aim study was develop and evaluate yogurt and fermented dairy dessert added with cashew sweet. The sweet was prepared in proportion to 40ºBrix. The yogurt and fermented dairy dessert were evaluated for pH, acidity, total protein, fat, total solid and ash content after one day of manufacture. Post-acidification was evaluated during 35 days of refrigerated storage. The acceptance and purchase intention test was performed after 14 days of refrigerated storage. The results of physico-chemical characteristics, post-acidification and sensory evaluation were analyzed by Analysis of Variance and Tukey test (p<0.05) or regression analysis. The products is according the physico-chemical parameters required by the brazilian legislation. In post-acidification, the pH of the products decreased over time and acidity of yogurt was higher than fermented dairy dessert and the acidity on average 0.12% of lactic acid during the 35 days of storage. The yogurt presented a greater acceptance and intention to purchase than the fermented dairy dessert. The manufacture of the products showed viable from the economic point of view, physicochemical and sensorial, besides adding value to the whey and cashew.

ABSTRACT: Owing to the high demand for healthier foods, the food industry has been marketing diet and light yogurts. The present study aimed to sensorially evaluate yogurts prepared using natural sweeteners through a simple centroid mixture design with three repetitions at the central point using the preference map methodology. Different formulations were processed using stevia, xylitol, and sucrose in delimited proportions based on the sweetness of the sweetener. A team of tasters was recruited to survey the sensory attributes of the formulations using the check-all-that-apply (CATA) methodology. A product acceptance analysis was also conducted in which 50 consumers evaluated the formulations using a 9-point hedonic scale. After assessing the acceptance, consumers completed the CATA questionnaire. Internal and external preference maps were built using the obtained results. We found high acceptance means (xylitol:stevia:sugar)for F7 (1.0:0:0), F1 (0.5:0:0), and F2 (0:0.5:0.5), which were characterized by a sweet taste, creamy texture, strawberry flavor, fermented milk flavor, and light pink appearance. Formulations with the lowest scores were F6 (0:1.0:0), F3 (0.33:0.33:0.33), and F4(0.5:0.5:0), which were characterized by a residual and bitter taste, astringent sensation, and inconsistent texture.


RESUMO: Devido à grande procura por alimentos mais saudáveis, as indústrias alimentícias vêm introduzindo no mercado os iogurtes diet e light. O presente estudo teve como finalidade avaliar sensorialmente iogurtes produzidos com edulcorantes naturais através de delineamento de mistura centroide simples com três repetições no ponto central pela metodologia Mapa de preferência. Foram elaboradas diferentes formulações utilizando estévia, xilitol e sacarose em proporções delimitadas considerando o poder adoçante do edulcorante. Uma equipe de provadores foi selecionada para levantamento dos atributos sensoriais dos iogurtes por meio da metodologia Check-All-That-Apply (CATA). Foi ainda efetuada a análise de aceitação do produto em que cinquenta consumidores avaliaram as formulações usando escala hedônica de nove pontos. Após avaliação da aceitação, os consumidores preencheram a ficha do questionário CATA. Com osresultados obtidos foram montados mapas de preferência:interno e externo. Constatou-se maiores médias de aceitação das amostras F7 (1,0:0:0; xilitol:estévia:açúcar), F1 (0,5:0:0,5; xilitol:estévia:açúcar) e F2 (0:0,5:0,5; xilitol:estévia:açúcar) que apresentaram características como gosto adocicado, gosto doce, textura cremosa, sabor polpa de morango, aroma bebida láctea, aparência rosa claro, e as amostras com menores cores foram as F6 (0:1,0:0; xilitol:estévia:açúcar), F3 (0,33:0,33:0,33; xilitol:estévia:açúcar) e F4 (0,5:0,5:0; xilitol:estévia:açúcar)apresentaram características como sabor residual, gosto amargo, sensação adstringente, texturas em consistência.

ABSTRACT Objective To screen for and characterize lactic acid bacteria strains with the ability to produce fermented milk and reduce cholesterol levels. Methods The strains were isolated from traditional fermented milk in China. In vitro and in vivo evaluation of cholesterol-reduction were used to identify and verify strains of interest. Characteristics were analyzed using spectrophotometry and plate counting assays. Results The isolate HLX37 consistently produced fermented milk with strong cholesterol-reducing properties was identified as Lactobacillus plantarum (accession number: KR105940) and was thus selected for further study. The cholesterol reduction by strain HLX37 was 45.84%. The isolates were acid-tolerant at pH 2.5 and bile-tolerant at 0.5% (w/v) in simulated gastric juice (pH 2.5) for 2 h and in simulated intestinal fluid (pH 8.0) for 3 h. The auto-aggregation rate increased to 87.74% after 24 h, while the co-aggregation with Escherichia coli DH5 was 27.76%. Strain HLX37 was intrinsically resistant to antibiotics such as penicillin, tobramycin, kanamycin, streptomycin, vancomycin and amikacin. Compared with rats in the model hyperlipidemia group, the total cholesterol content in the serum and the liver as well as the atherogenic index of rats in the viable fermented milk group significantly decreased by 23.33%, 32.37% and 40.23%, respectively. Fewer fat vacuoles and other lesions in liver tissue were present in both the inactivated and viable fermented milk groups compared to the model group. Conclusion These studies indicate that strain HLX37 of L. plantarum demonstrates probiotic potential, potential for use as a candidate for commercial use for promoting health.

ABSTRACT

A dieta, quando realizada de forma inadequada, passa a ser um fator determinante para a ocorrência de cárie e erosão dentária, principalmente levando em consideração o aumento do consumo de alimentos e bebidas industrializadas por crianças e adolescentes. No presente estudo avaliaram- -se as propriedades bioquímicas dos leites fermentados encontrados em um supermercado da zona leste de Teresina, PI. Foram analisadas 36 amostras de 6 marcas comerciais diferentes, por meio das propriedades de pH endógeno e Sólidos Solúveis Totais (SST). As análises foram submetidas ao teste Kolmogorov-Smirnov e a análise da variância pela ANOVA, seguida de pós-teste Tukey para a comparação entre os grupos, no programa Minitab 16. As marcas analisadas apresentaram valor de pH que variaram de 3,13 a 3,68. Todas apresentaram valores de pH abaixo do valor considerado crítico para o processo de desmineralização do esmalte (5,5). Em relação aos sólidos solúveis totais, os valores oscilaram entre 5,93 e 11,2. Com os dados obtidos, pode-se sugerir que, se essas bebidas forem ingeridas com frequência, podem apresentar tanto um potencial cariogênico como erosivo. É de fundamental importância que os profissionais de saúde estejam cientes e alertem seus pacientes sobre os riscos que esses alimentos podem oferecer à saúde bucal dos mesmos.(AU)


Diet, when performed in inadequate ways, becomes a determining factor for occurrence of caries and dental erosion, mainly when taking into consideration the increasing consumption of industrialized foods and beverages by children and adolescents. This study aimed to evaluate the biochemical properties of fermented milks found in a supermarket in the eastern zone of Teresina-PI. Thirty-six samples from six different commercial brands were analyzed through their endogenous pH and Total Soluble Solids (TSS) properties. To analyze the data, Kolmogorov-Smirnov test and analysis of variance by ANOVA, followed by a Tukey post-test for comparison between the groups in the Minitab 16 program were performed. The analyzed brands presented pH values ranging from 3.13 to 3.68. All of them presented pH values below those considered critical for the enamel (5,5). The TSS data ranged from 5.93 to 11.2. With the data obtained, it can be suggested that if those drinks are frequently ingested, it can present both cariogenic and erosive potential. It is important that health professionals be aware and alert their patients about the risks that those sort of beverage can offer to their oral health.

ABSTRACT

A mangaba (Hancornia speciosa) fruto característico do cerrado tem elevado valor nutricional e grande potencial para exploração econômica. O objetivo do trabalho foi produzir iogurte com polpa de mangaba sem aditivos químicos e avaliar suas características físico-químicas, microbiológicas, sensoriais e vida de prateleira. O experimento foi composto por cinco tratamentos variando a concentração (0, 5, 10, 15, 20%) da polpa de mangaba. Foi verificada a aceitabilidade dos tratamentos utilizando escala hedônica de nove pontos, com 100 provadores não treinados. O tratamento com polpa de mangaba que obteve maior aceitação foi caracterizado por análises físico-químicas e determinada a vida de prateleira, a qual foi avaliada por meio do pH, acidez titulável e análises microbiológicas. As análises físico-químicas e microbiológicas foram realizadas nos dias 0, 7, 14, 21, 28 e 35. No 7o e 28o dias foi realizada análise sensorial para verificar a aceitabilidade durante o armazenamento. O tratamento 2, com 5% de polpa foi selecionado pelos degustadores na análise sensorial, e durante o armazenamento, apresentou resultados microbiológicos, pH e acidez dentro dos padrões estabelecidos pela legislação e não houve alteração na aceitabilidade. Conclui-se que o iogurte adicionado de polpa de mangaba a 5% apresentou boa aceitabilidade e características adequadas para o consumo humano.(AU)

Abstract This work aimed at analyzing labels (based on the current legislation) and confirm the nutritional information given on the label of five brands of diet yogurt. The physicochemical analyses carried out were: moisture, minerals, proteins, lipids, reducing carbohydrates in lactose, non-reducing carbohydrates in sucrose, total carbohydrates, acidity and pH. All brands of diet yogurt had mandatory nutritional information on their label. As for content, only brands B and C are compliant with the current legal demands. The numbers found in the analyses for protein and carbohydrates were higher than the percentages shown on the labels in all brands. There were no numbers for lipids. Despite the differences found on the labels, all brands of diet yogurt are in accordance with the Identity and Quality Standards for Fermented Milk as for protein, acidity and fat content. There was a significant difference in the complementary analyses for moisture, minerals and acidity. Nevertheless, the numbers assigned to carbohydrates and protein were lower than the actual values determined in lab and, in some brands, carbohydrates were three times higher. Thus, despite presenting all the necessary information on the label, the companies are not concerned about showing the correct nutritional data to consumers.

ABSTRACT

Após o processo de dessoragem, o iogurte tipo Grego, torna-se mais espesso e cremoso. As informações impressas nos rótulos de alimentos destinam-se a identificar a origem, a composição e as características nutricionais constituindo-se, portanto, em elemento fundamental para a saúde pública. O objetivo deste trabalho foi verificar a procedência, composição, formas de conservação e validade dos iogurtes gregos, bem como o marketing e o nível de conformidade das informações obrigatórias de rotulagem. Foram coletados 25 rótulos de diferentes marcas expostas à venda em supermercados na cidade do Rio de Janeiro, no período de julho a dezembro de 2015. Quanto à origem, 56% das amostras tinham sua origem em indústrias produtoras localizadas em São Paulo, 24% em Minas Gerais, 12% no Paraná. Dessas amostras, 48% informavam a temperatura de conservação entre 1ºC e 10ºC e instruíam o consumidor a consumir o produto imediatamente após aberto. O prazo de validade calculado variou entre 40 e 51 dias. Percebe-se, na observação dos rótulos, o marketing relacionado ao termo grego, que parece exercer grande influência na escolha destes tipos de iogurtes, uma vez que este termo sempre desctaca-se nos rótulos por cores contrastantes ou pelo tamanho das letras que superaram em alguns rótulos o nome de venda e marca dos produtos.

This study aimed to evaluate some microbiological and physical-chemical characteristics of fermented milk beverages collected at the main supermarkets in Belo Horizonte (MG). 40 samples of the products corresponding to five distinct brands were collected. They were submitted to the following analyses: Most Probable Number (MPN) of total (30ºC) and thermal tolerant coliforms (45ºC), Salmonella spp., coagulase positive Staphylococcus, molds and yeasts, lactic acid bacteria, pH, titratable acidity and contents of moisture, total solids, protein and fat. The analyses were carried out during the last week of shelf life. The microbiological quality of the samples was good and the counts of lactic bacteria were above the minimum established by the official legislation. Streptococcus and Lactobacillus were isolated and identified from the products and Lactobacillus delbrueckii was molecularly identified in three samples. The mean values for the contents of fat and protein, titratable acidity, pH, moisture and total solids ranged from 1.24 to 1.98%; 1.88 to 2.22%; 0.54 to 0.66%; 3.91 to 4.16; 81.18 to 83.25% and 16.75 to 18.82%, respectively. All samples had protein content in agreement with the official legislation.


O objetivo do presente trabalho foi avaliar as características microbiológicas e físico-químicas de bebidas lácteas fermentadas. Foram coletadas 40 amostras de bebidas lácteas fermentadas pertencentes a cinco marcas distintas, em grandes redes de supermercados de Belo Horizonte. Em cada amostra, foram avaliados os seguintes parâmetros: número mais provável de coliformes totais (30ºC), número mais provável de coliformes termotolerantes (45ºC), pesquisa de Salmonella spp., contagem de Staphylococcus coagulase positiva, contagem de bolores e leveduras, contagem total de bactérias lácticas viáveis, umidade, sólidos totais, teor de proteína, teor de gordura, pH e acidez titulável. As análises foram realizadas na última semana do período de validade. As amostras apresentaram qualidade microbiológica satisfatória, bem como contagens totais de bactérias lácticas viáveis superiores ao mínimo estabelecido pela legislação. Streptococcus e Lactobacillus foram identificados em todas as marcas de bebidas lácteas fermentadas analisadas, e em três delas foi possível identificar a espécie Lactobacillus delbrueckii. Os valores médios encontrados para os teores de gordura, proteína, acidez titulável, pH, umidade e sólidos totais variaram de 1,24 a 1,98%, 1,88 a 2,22%, 0,54 a 0,66%, 3,91 a 4,16, 81,18 a 83,25% e 16,75 a 18,82%, respectivamente. Todas as marcas de bebidas lácteas fermentadas apresentaram teor médio de proteína superior ao mínimo preconizado pela legislação.

The variations of temperature during the cold chain can impair the quality of live foods, such as fermented milks. Probiotic bacteria are commonly added to food to provide the consumer with beneficial effects. Nevertheless, the concentration of probiotic in the end products should be elevated to ensure functionality. The aim of this study was to evaluate the viability of probiotic strains of bifidobacteria and starter strain of Streptococcus thermophilus in fermented milks at storage temperatures of 4 and 10ºC, for a period of 28 days. Commercial cultures of Bifidobacterium spp. were added to milk fermented by Streptococcus thermophillus and stored for 28 days at 4 and 10ºC. During this period, bifidobacteria and S. thermophilluscultures were monitored to check their behavior in the evaluated storage conditions. Viable bifidobacteria and S. thermophillus counts showed no significant variation during storage at 4 and 10ºC (p < 0.05), indicating that both of these conditions are adequate for maintaining their initial concentrations. The results indicate that the storage conditions usually adopted in sale establishments of dairy products are suitable to maintain bifidobacteria and S. thermophillus cultures in fermented milk.(AU)


As variações de temperatura que ocorrem durante a cadeia refrigerada da produção leiteira pode interferir na qualidade de alimentos bioativos, como leites fermentados. Bactérias probióticas são usualmente adicionadas a alimentos, visando a oferecer ao consumidor efeitos benéficos. O objetivo deste trabalho foi avaliar a viabilidade de culturas probióticas de bifidobactérias e de cultura starter de Streptococcus thermophilus em leites fermentados, armazenados nas temperaturas de 4 e 10ºC por um período de 28 dias. Culturas comerciais de Bifidobacterium spp. foram adicionadas ao leite fermentado produzido com Streptococcus thermophillus e estocados por 28 dias a 4 e 10ºC. Nesse período, as culturas de Bifidobacterium spp. e Streptococcus thermophillus foram monitoradas, com o objetivo de verificar seus comportamentos nas temperaturas de estocagem testadas. As contagens de ambos os micro-organismos não apresentaram variação significativa ao longo do período de estocagem a 4 e a 10ºC (p < 0,05), indicando que as duas temperaturas testadas podem oferecer condições adequadas de conservação desse produto. Os resultados obtidos indicaram que as condições de conservação de alimentos usualmente adotadas para produtos lácteos em estabelecimentos comerciais são adequadas para manter as contagens de bifidobactérias e Streptococcus thermophillus em leites fermentados.(AU)

Background & objectives: The human gut microbiota play a significant role in nutritional processes. The concept of probiotics has led to widespread consumption of food preparations containing probiotic microbes such as curd and yogurt. Curd prepared at home is consumed every day in most homes in southern India. In this study the home-made curd was evaluated for lactic acid bacteria (LAB) with probiotic potential. Methods: Fifteen LAB (12 lactobacilli, 1 lactococcus, 2 Lleuconostoc) and one yeast isolated from home-made curd were evaluated for resistance to acid, pepsin, pancreatin and bile salts; antimicrobial resistance; intrinsic antimicrobial activity; adherence to Caco-2 epithelial cells; ability to block pathogen adherence to Caco-2 cells; ability to inhibit interleukin (IL)-8 secretion from HT-29 epithelial cells in response to Vibrio cholerae; and ability to induce anti-inflammatory cytokine expression in THP-1 monocyte cells. Results: Llactobacillus abundance in fermenting curd peaked sharply at 12 h. Nine of the strains survived exposure to acid (pH 3.0) for at least one hour, and all strains survived in the presence of pancreatin or bile salts for 3 h. None showed haemolytic activity. All were resistant to most antimicrobials tested, but were sensitive to imipenem. Most strains inhibited the growth of Salmonella Typhimurium while five inhibited growth of V. cholerae O139. Seven strains showed adherence to Caco-2 cells ranging from 20-104 per cent of adherence of an adherent strain of Escherichia coli, but all inhibited V. cholerae adherence to Caco-2 cells by 20-100 per cent. They inhibited interleukin-8 secretion from HT-29 cells, in response to V. cholerae, by 50-80 per cent. Two strains induced IL-10 and IL-12 messenger ribonucleic acid (mRNA) expression in THP-1 cells. Interpretation & conclusions: LAB in curd had properties consistent with probiotic potential, but these were not consistent across species. LAB abundance in curd increased rapidly at 12 h of fermentation at room temperature and declined thereafter.

Aim: This study shows the possible synthesis of Selenium Nanoparticles (SeNPs) in aerobic optimized conditions using Bacillus laterosporus (B. laterosporus) bacterial strain. Methodology: B. laterosporus was used to reduce selenium ions (selenite anions) to SeNPs by fermentation in Luria-Bertani Enrichment (EM) medium. Optimization of fermentation conditions using two-level full factorial design was performed. SeNPs were further characterized by UV-Vis., DLS, TEM, FT-IR, EDX and XRD analysis. SeNPs synthesis by Gamma irradiated B. laterosporus cells at different radiation doses was reported. Evaluation the probability of B. laterosporus to synthesis SeNPs by fermentation in skimmed milk aerobically. A microtiterplate assay was used to evaluate the ability of SeNPs to inhibit the biofilm formation of Pseudomonas aeruginosa. Evaluating the antimicrobial activity of some antibiotic agents upon addition of SeNPs was performed. Results: B. laterosporus reduced the soluble, toxic, colorless selenium ions to the insoluble, non-toxic, red elemental SeNPs. Statistical analysis showed that the results were normally distributed. Temperature, incubation period and pH were significant factors in the fermentation process, in which the maximum SeNPs produced (8.37μmole/ml) was at temperature 37ºC, incubation period 48hr, pH7. The Gamma radiation exposure dose 1.5kGy gave the maximum SeNPs produced (10.01 μmole/ml). A pink color appear in the fermented milk revealing the formation of SeNPs-enriched milk. SeNPs inhibit the biofilm formation of Pseudomonas aeruginosa with a percentage reduction of 99.7%. SeNPs increase the antibacterial activity of fucidic acid by 13.6% and 28.5% against Escherichia coli and Staphylococcus aureus respectively. But with Gentamycin sulphate, no change in the antibacterial activity. Conclusion: SeNPs can be synthesized aerobically by the probiotic B. laterosporus bacterial strain. SeNPs can be incorporated in nutraceuticals and functional foods like milk also can be used to inhibit the bacterial biofilm formation and can be added to some antibacterial creams to enhance their antimicrobial activity.
